Glazed Salmon Bowl

Ingredients

400g skinless salmon

1 bag coleslaw mix or veg of choice

1/2 cucumber

1/3 cup soy sauce

2 TBS honey

1 clove garlic

1 tsp ginger

2 cups rice cooked

2 TBS oil of choice

Instructions

  • Prepare salmon by slicing into ~3cm wide slices

  • Finely chop garlic and ginger. Mix well with soy sauce and honey until well combined to make the marinade.

  • Place salmon in the marinade and let sit covered in refrigerator for 20 minutes.

  • Heat a large pan on the stove on high heat. Add 2TBS of oil of choice and heat. Sear salmon until golden brown. Set aside.

  • Using the same pan, pour remaining marinade and simmer on low heat until thickened.

  • Assemble bowl with rice on the bottom, veg, sliced cucumber and cucumber. Add remaining glaze on top and enjoy!
