Shakshouka Eggs

Ingredients

  • 2 tsp olive oil

  • 1 brown onion

  • 1 tsp garlic

  • 1 can diced tomato

  • 1 can kidney beans

  • 4 eggs

  • 1/4 cup or 20g Grated mozzarella (can be substituted for any cheese)

 

Spices

  • 1 tsp salt

  • 1/2 tsp black pepper

  • 1 tsp chilli powder

  • 1 tsp paprika

  • 1/2 tsp cumin

Hot tip: add any vegetables you have in the fridge for extra flavour and nutrients!

Instructions

  1. Heat the olive oil in a pan on medium heat

  2. Add in the onion and garlic, and sauté for 5 minutes

  3. Add in the diced tomato, kidney beans, and spices, then let them simmer for 10 minutes

  4. With a spoon, make 4 small dents in the tomato sauce, then crack the an egg in each dent

  5. Top the eggs with cheese, then cover the pan and let it cook for 7 minutes, until the eggs are cooked to the preferred liking

  6. Enjoy with toasted bread!
